Meat, Fish and The Glycemic Index (GI)

Because the carb content of meat and fish is minimal, these foods have a low-GI value with minimal effect on blood glucose levels. Indeed the fattier the meat, the lower the GI rating. However, since meat is a main source of saturated fat, which is a cause of atherosclerotic heart disease, the leaner the meat the better for health.

By contrast, fish (especially oily fish) and game meats are healthier options. Fish in particular is an important food option in any low GI diet.
